Configure postfix for local delivery in the default install (listening only on the local interface) and a small nntp server with several groups suited to families, students, etc. Alter Evolution and Thunderbird first-use wizards to offer to configure these accounts. This is a feature that few people request, but few of the users that would benefit from it most would imagine it as a possibility or be able to figure out how to set it up if they did imagine it.
