I'm assigning the NM bug task to myself to work on allowing users to toggle this setting.
Note that privacy extensions only really affect autogenerated addresses (or at least, that's what I got out of my quick read of RFC 4941). It's a nice and useful feature for users in general when dealing with non-IPv6 and/or public networks. In enterprise environments it shouldn't be too much of a big deal, especially since IP addresses would be handed out by DHCP.
