Console mode is the best way for sure to handle servers, but in many ways applications are visual and need X and a minimal desktop environment. Thinking about Gnome, a "minimal desktop" could include gnome-sessione, nautilus, gnome-panel e nothing more. No audio & multimedia, no games or office apps. The smallest and usable desktop for a server, as option on installation or in tasksel.
