XCP/XenServer driver: Log Progress of sparse_dd during resize down

For XCP/XenServer driver, add logging to specify progress of sparse_dd during a resize_down:.
This is to help track the status during long running method sparse_dd.
Approach: After n seconds, logs how many bytes have been written already, and how many are left.
