Should Ease take use of what elementary call "AppMenu"? This let's us remove "file, edit, view etc.", and makes it easier for the user to navigate.

I think it should, the mock ups make use of it and it makes sense to stick to some sort of HIG. Like you say it keeps the menus simple as well - Luke
