Selected color should be accessible in the visible place on the Carto interface.
An click event on this color should open dialog 'select color':

We already have an default color selection dialog box.
I'd like to determine with you on how long it would take to implement others:
a) wheel of colors
b) RGB or CMYK sliders
c) HSL sliders
More over I think that it would be nice to have an 'current color' on the tool box.
