Split up the files into sections

Currently the code is all in two big files. This makes maintaining the pieces harder, and it easier to lose track of what is happening.
The code can be split up in several different fashions. Base packet types in one file, connections in another, etc. XEPs could be in a subdirectory, or server and client type of information split out that way.
