Open submenu by mouseover
There is already a option to open Cardapio when you mouse over it. Mayby it's an idea when you mouse over a submenu, like Audio and Video, it automatically opens. In Linux Mint they do the same.

This is not a good idea for several reasons:
* If you want to open a category that is further down the list, all categories on the way will flicker open while moving over them. This would be incredibly distracting.
* As soon as you have a category open, moving to the desired application becomes a game of hot wire because you have to move off the category button without touching another one.
These distractions would make Cardapio extremely annoying to use, even if it would be opt-in in the properties. It is much faster to just be able to click the category.
